GOOD FOOD MADE SIMPLE
Anthony Loos is the Executive Chef of the Swan Terrace Restaurant at The Founders Inn in Virginia Beach, Virginia. He started in August of 2003. Chef Anthony believes that food should be pure, simple, and of the freshest quality. "The best dish does not overplay sauce, garnish, or side ingredients," he says. "Instead, they are but accents to the main ingredient allowing the natural flavor to emerge unencumbered." All of his creations are prepared in the newly renovated, interactive kitchen at the Swan Terrace that was completed in January of this year. The new design allows customers to see the Chef and his staff in action as he prepares their meal.
He will be preparing three strawberry dishes: Irish Cream Zabaglione (strawberries and shortcake cookies), Whole Wheat Crepes (strawberries and crepes) and a Virginia Strawberry and Boston Bibb salad. All dishes will be prepared with the health conscious consumer in mind. The desserts will be low in calories and sweetened with Splenda verses sugar. Each dessert will feature strawberries grown locally within the region.
CULINARY SCHOOL AND BEYOND
Chef Loos is a 1992 graduate of the Culinary Institute of America in Hyde Park, New York. Upon graduation, Chef Loos served in a variety of establishments such as the Inn at Little Washington in Washington, Virginia, under the direction of renowned Chef Patrick O’Connell; Galileo in Washington, D.C., under the guidance of Chef Roberto Donna; Red Fox Inn in Middleburg, Virginia, as Executive Chef; and as the Executive Sous Chef at the Lansdowne Resort in Leesburg, Virginia, a sister property of The Founders Inn, for seven years.
LOOS FUTURE PLANS
In 2004, Chef Loos offered a bi-monthly series of cooking workshops at The Founders Inn where attendees gained an hour of group culinary instruction in the property's Jefferson Amphitheater. He would like to see the Swan Terrace restaurant become one of the best restaurants on the East Coast.
